Frantic Friday – Spagetti Meatloaf

Todays offering is a fast and easy main course that I often make. It freezes really well and tastes just as good as when it is freshly made. Now this a a recipe that you decide on the quantites. Honestly you can’t go wrong, so have a try.

Spaghetti Meatloaf
1 tin spaghetti
Mince Beef
Seasoning – mixed herbs or salt and pepper or whatever else you want to use.
Weetbix (crushed) or breadcrumbs
Grated Cheese

Combine spagetti, mince, diced onion, egg and seasoning and place in greased casserole dish (I generally use a square one – it’s easier to dish up from. Sprinkle generously with crushed weetbix or breadcrumbs then grated cheese. Bake Moderate Oven until cooked and the cheese is nicely browned.

Now this is not the traditional meatloaf – you know the kind – tip it out of the tin, it is square and you can slice it. It is more a serve it up with a large spoon kind of dish. As I said quantities are up to you. Have company coming – then use a large tin of spagetti and more mince. For just my family I use a 420 gram tin of spagetti and around 500 grams of mince – that feeds us comfortably with the addition of some mashed potatoe and what ever else I can find.
